CAVU Café open for business at Auburn-Lewiston Airport
Offering “traditional food with a modern taste,” CAVU Café officially opened its doors this week at the Auburn-Lewiston Municipal Airport. Featuring views across the airfield, the new dining spot, which takes its name from the aviation acronym for “Clear And Visibility Unlimited,” offers distinctive food in a unique setting.
Restaurant owner Rick Bennett of Oxford, a former President of the Maine Senate, thanked the community for its warm welcome of the dining spot to the area. “We are grateful to the neighboring businesses, local people and Airport staff and board members for helping us get off the ground,” he said. “The Auburn-Lewiston airport is an extraordinary facility, a wonderful gateway for visitors to our region and a terrific partner. Our grand opening here is an opportunity to showcase our menu and celebrate a new beginning.”
The ribbon-cutting ceremony featured remarks by Auburn Mayor Jonathan Labonte, Lewiston Mayor Bob MacDonald and former Androscoggin County Chamber of Commerce Chair Patti Gagne. The event was hosted by Chamber President Chip Morrison. Attendees sampled menu offerings including currywurst, chips & salsa, Guinness mac & cheese, dessert grilled cheeses, chicken salad and potato crisps.
“We aim to provide diners with a destination, in an extraordinary setting, for meals that will satisfy any palette,” said general manager Delian Valeriani. “With our breakfasts and lunches, we want to sustain our guests for the whole day while making their dining experience pleasurable – even addicting!”
Executive chef Pete Lara noted that the menu will feature diverse comfort foods, including German, Spanish, Tex-Mex, French, and English favorites, along with New England classics such as pastrami on rye, blueberry pancakes, fried pickles, meatloaf and a chicken salad with apricot, pistachios and tarragon.
Meals will be made from scratch from quality ingredients and special dining needs, such as gluten-free options, will be accommodated. “We look forward to making a distinctive contribution to the emerging food culture of Lewiston-Auburn,” said Lara.
CAVU Café is open for table service and take-out seven days per week from 6 a.m. to 3 p.m. In-plane and on-site catering is available all day and in the evenings.
